Ingredients:
- 2 cups of spinach
- 1 cups of Spinach
- 1 cup of frozen mango
- 1 banana
- 1 cup of unsweetened almond milk
- 1 tbsp of chia seeds
- 1 tbsp of honey (optional)

1. Add all the ingredients to a blender and blend until smooth.

- ¼ cup of pumpkin seeds

1. In a large bowl, mix together the mixed greens, sweet potatoes, quinoa, cherry tomatoes, cucumbers, red onions, and beets.

Ingredients:
Two 15 oz cans low-sodium black beans, drained and rinsed (OR 3 cups cooked black beans)
1 packed cup finely diced red onion
5 cloves of garlic, minced
4 cups vegetable broth
1 teaspoon cumin
Salt and pepper to taste

Instructions:
In a large pot, sauté the diced red onion and minced garlic over medium heat until softened and fragrant.
Add the drained and rinsed black beans to the pot and stir well.
Pour in the vegetable broth and add the cumin. Stir to combine.
Bring the soup to a boil, then reduce the heat to low and let it simmer for about 15-20 minutes, allowing the flavours to meld together.
Using an immersion blender or a regular blender, blend the soup until smooth and creamy. If using a regular blender, be sure to blend in batches and exercise caution as hot liquids can expand.
Return the blended soup to the pot and season with salt and pepper to taste. Stir well.
Simmer the soup for an additional 5 minutes to heat through.
